Breakfast of the Champion
A waffle recipe from endurance athlete Mike Kloser.
MIKE KLOSER is one of the world’s best endurance athletes, having led teams to five adventure-racing world titles over the past ten years (he’s going for number six on September 29), along with victories at Primal Quest, the Elk Mountains Grand Traverse, and the World Mountain Bike Championship. How does the 50-year-old Vail, Colorado, resident find the energy to train while holding down a full-time job as Beaver Creek resort’s activities director and raising two teenagers? One key: these ultra-nutritious waffles. But be warned, says Kloser: “I can sit and gorge myself on them if I’m not careful.”
WafflesBanana Nut Chocolate Chip Waffles
TIME: 15 MINUTES
Makes 7–8 standard waffles (or six 5-inch pancakes)
½ cup whole oats
1 ¼ cups skim milk
1 medium egg white
1 ½ cups whole-wheat pancake mix, like Coach’s Oats Multigrain Pancake Mix (coachsoats.com)
1 tsp flax seeds
1 tsp extra virgin olive oil
1 banana, sliced (can substitute ½ cup berries or other fruit)
¼ cup dark chocolate chips
¼ cup nuts (crushed pecans or walnuts or sliced almonds)
(1) Combine whole oats and milk in mixing bowl and allow to soften for five minutes.
(2) Stir in remaining ingredients. Add a little milk to thin batter if necessary.
(3) Preheat waffle iron. Ladle in batter; cook to desired darkness.
(4) Serve topped with fresh or frozen berries, peaches, nonfat vanilla Greek yogurt, and real maple syrup.
